Delicious Vegan Lentil Patties

These lentil patties are a fantastic meat alternative that are rich in protein and perfect for vegans and non-vegans alike! Easy to prepare and bursting with flavor, these patties are so tender they melt in your mouth. Follow this simple recipe and enjoy a delightful meal any day of the week.

Ingredients

🥄 1 1/2 cups (285g) dried red lentils
🧅 1 large shallot
🧄 2 garlic cloves
🥕 1 small carrot
🌿 15g (1/4 cup) chopped fresh parsley
🍅 1 tablespoon tomato puree
🧂 1 teaspoon salt
🌶️ 1/2 teaspoon black pepper
🫒 Olive oil


Instructions

1- Prepare the Lentils:

  • Soak 1 1/2 cups of dried red lentils in enough water to cover them by about 2 inches.
  • Let them soak for 2 hours.

2- Drain and Blend:

  • After soaking, drain the lentils.
  • Add them to a food processor.

3- Prepare the Vegetables:

  • Chop the large shallot and add it to the food processor.
  • Mince the 2 garlic cloves and grate the small carrot.
  • Add both to the food processor along with the chopped fresh parsley.

4- Add Remaining Ingredients:

  • Add 1 tablespoon of tomato puree, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to the food processor.

5- Blend the Mixture:

  • Pulse the food processor until all ingredients are well combined.
  • The mixture should be sticky, which is normal and desired.

6- Shape the Patties:

  • Heat a bit of olive oil in a non-stick pan over medium heat.
  • Scoop out 1/4 cup of the lentil mixture at a time and form it into patties about 1/2 inch thick.

7- Cook the Patties:

  • Place the patties in the pan and cook for about 3 minutes on each side.
  • Cook until they are golden brown and crispy.

8- Drain and Serve:

  • Transfer the cooked patties onto a paper towel-lined plate to drain any excess oil.
