Ingredients:
- 500g fresh strawberries
- 300g frozen raspberries
- 300g tart cherries (Kent cherries preferred)
- 600ml fruit juice (apple or red fruit juice)
- 1 cinnamon stick
- 1 tsp vanilla extract
- 1 package instant vanilla pudding powder
- Water or juice (for mixing with pudding powder)
- Fresh berries (for garnishing)
- Optional: vanilla ice cream, vanilla sauce, or heavy whipping cream for serving

- Medium-sized pot
- Small bowl
- Serving glasses or an airtight container
Instructions:
1. Prepare your fruit by washing thoroughly. Remove stems and cut strawberries into small, bite-sized pieces.
2. In a medium-sized pot, combine the fruit juice, a cinnamon stick, and vanilla extract. Bring the mixture to a boil.
3. While the juice mixture is heating, reserve some of the most attractive fruit bits for garnish.
4. Add about half of your prepared fruit to the boiling juice mixture, and let it simmer on low heat.
5. In a small bowl, mix the instant vanilla pudding powder with a few tablespoons of water or juice until smooth.
6. Blend this pudding mixture into the simmering pot of fruit and juice. Bring it back to a boil, stirring continuously until the compote thickens and becomes well combined.
7. Gently blend the remaining fruit into the thickened mixture.
8. Remove the pot from heat. Be sure to take out the cinnamon stick at this point.
9. Portion the compote into individual serving glasses for an elegant presentation, or place in an airtight container if you plan to store it.
10. Allow the compote to cool completely. If not serving immediately, store it in the fridge.
11. When ready to serve, pair the compote with vanilla ice cream, vanilla sauce, or heavy whipping cream as preferred and garnish with fresh berries.
Cooking Tips:
- For an intensely flavored compote, let it chill overnight to allow the flavors to meld together.
- If fresh tart cherries are unavailable, canned or jarred varieties without added sugars can be used as a substitute.
