Picadillo Ranchero: A Quick and Easy Mexican Delight

Ingredients
🧅 1 onion, cut into strips
🌶 2 jalapeños, cut into strips
🧄 2 minced garlic cloves
🥩 2 lbs ground beef
🧂 Salt to taste (about 2 1/2 tsp)
🧄 1 1/2 tsp garlic powder
🧅 1 1/2 tsp onion powder
🌿 1 tsp ground cumin
🍃 1 tsp oregano
🌶 1 tsp black pepper
🥔 1 lb baby yellow potatoes
🍅 4 Roma tomatoes, small diced
🍏 3 tomatillos, small diced
🌶️ 2-3 chile chipotles in adobo sauce, finely chopped
🍅 1 can El Pato tomato hot sauce

Instructions
1- Prep the Ingredients:
- Chop the onion, jalapeños, garlic, tomatoes, and tomatillos as indicated in the ingredients list.
2- Sauté the Vegetables:
- In a large pan, add a little oil and set over medium-high heat.
- Once hot, add the onion and jalapeños.
- Sauté for a couple of minutes until slightly softened.
3- Add Garlic:
- Add minced garlic to the pan and sauté for about 30 seconds until fragrant.
4- Cook the Beef:
- Add the ground beef to the pan.
- Break it down with a spatula and season with salt, black pepper, garlic powder, onion powder, cumin, and oregano.
- Cook for about 3 minutes.
5- Integrate Potatoes:
- Mix in the baby yellow potatoes and cook for another 5 minutes.
- Remove any excess grease from the meat.
6- Combine with Vegetables and Sauce:
- Add diced tomatoes and tomatillos along with the chile chipotles.
- Mix well, then add the tomato hot sauce and one cup of water.
- Stir to combine.
7- Simmer:
- Reduce the heat to medium-low and let it come to a simmer.
- Test for seasoning, adjusting salt as necessary.
8- Cook to Finish:
- Add bay leaves if desired, cover the pan, and let it cook for an additional 15 minutes.
- Ensure the potatoes are tender.
9- Garnish and Serve:
- Turn off the heat and sprinkle with chopped cilantro.
- Serve with refried beans and warm flour tortillas.
