Despite its name, this burfi doesn't actually contain milk, making it accessible and easy to prepare with just a handful of ingredients. Let's recreate this delightful treat that has been a favorite of many 90s kids and beyond.
Ingredients
🧈 1/2 cup ghee
🌾 1 cup all-purpose flour
🍚 1/2 cup sugar
🌿 2 to 3 cardamom pods
Instructions
1- Melt the Ghee:
- Begin by melting the ghee in a kadai or heavy-bottomed pan over medium heat.
- Ensure it's completely melted before proceeding.
2- Add Flour:
- Once the ghee is melted, add the all-purpose flour to the pan.
- Stir continuously using a spatula, ensuring there are no lumps.
- Mix until the mixture becomes foamy.
3- Transfer and Cool:
- Once foamy, transfer the mixture into a bowl.
- Let it cool slightly.
4- Prepare Sugar Mixture:
- In a blender, powder the sugar along with cardamom pods.
- Create a fragrant mixture.
5- Combine Mixtures:
- Gradually add the powdered sugar and cardamom mixture to the ghee-flour mixture.
- Mix thoroughly until well combined.
6- Line Your Mold:
- Line a mold of your choice (glass, steel, or aluminum) with parchment paper.
- Prevent sticking.
7- Set the Mixture:
- Pour the prepared mixture evenly into the lined mold.
- Press down gently to smooth the surface.
8- Refrigerate:
- Place the mold in the refrigerator for about 30 minutes.
