Broccoli and Egg Omelette Toast
Start your day with a nutritious and delicious breakfast — Broccoli and Egg Omelette Toast. This simple yet flavorful dish combines the goodness of broccoli with the protein-rich eggs, all served on crispy toast. It's perfect for a quick weekday breakfast or a lazy weekend brunch.
Ingredients
🥚 2 large eggs
🥦 1/2 cup broccoli florets, finely chopped
🧈 1 tablespoon butter
🧂 Pinch of salt
🌿 Pinch of black pepper
🍞 2 slices of whole grain bread
🧀 1/4 cup shredded cheese (optional)
🧄 1 small clove of garlic, minced (optional)
🌶️ A pinch of chili flakes (optional)
Instructions
1- Prep the Broccoli:
- Begin by finely chopping the broccoli florets. If desired, mince a small garlic clove for added flavor.
2- Whisk the Eggs:
- In a small bowl, crack the eggs and add a pinch of salt and pepper. Whisk them together until the yolks and whites are fully blended.
3- Cook the Broccoli:
Heat a non-stick skillet over medium heat.
Add the butter, letting it melt completely. If using, add the minced garlic and sauté for about 30 seconds until it's fragrant.
Add the chopped broccoli to the skillet and cook for 2-3 minutes, or until it has softened slightly and is bright green.
4- Make the Omelette:
Pour the whisked eggs into the skillet, stirring gently to incorporate the broccoli.
If desired, sprinkle the cheese over the eggs. Cook for approximately 3-5 minutes, or until the eggs begin to set around the edges.
5- Flip and Finish:
Carefully flip the egg mixture to cook the other side for another 1-2 minutes.
If using, sprinkle some chili flakes for a bit of heat.
6- Toast the Bread:
- While the omelette finishes cooking, toast the slices of whole grain bread until they reach your preferred level of crispiness.
7- Assemble:
Place the cooked omelette on top of the toasted bread slices.
Serve immediately and enjoy the melty goodness.
