Broccoli and Egg Omelette Toast

Ingredients

🥚 2 large eggs

🥦 1/2 cup broccoli florets, finely chopped

🍞 2 slices of whole grain bread

🧀 1/4 cup shredded cheese (optional)

🧄 1 small clove of garlic, minced (optional)

🌶️ A pinch of chili flakes (optional)


Instructions

1- Prep the Broccoli:

  • Begin by finely chopping the broccoli florets. If desired, mince a small garlic clove for added flavor.

2- Whisk the Eggs:

  • In a small bowl, crack the eggs and add a pinch of salt and pepper. Whisk them together until the yolks and whites are fully blended.

3- Cook the Broccoli:

  • Heat a non-stick skillet over medium heat.

  • Add the butter, letting it melt completely. If using, add the minced garlic and sauté for about 30 seconds until it's fragrant.

  • Add the chopped broccoli to the skillet and cook for 2-3 minutes, or until it has softened slightly and is bright green.

4- Make the Omelette:

  • Pour the whisked eggs into the skillet, stirring gently to incorporate the broccoli.
