Ingredients
🍜 1 pack of instant noodles
🧄 2 cloves garlic, minced
🫑 1/2 red bell pepper, thinly sliced
🥬 1 cup baby spinach
🥚 1 egg
🫒 1 tablespoon olive oil
🌶️ 1 teaspoon chili flakes (optional)
🌿 1 tablespoon soy sauce
🌾 1 teaspoon sesame seeds
🧅 2 spring onions, finely chopped
Instructions
1- Prep the Ingredients:
- Start by mincing the garlic, slicing the red bell pepper, and chopping the spring onions. Set aside all the prepped ingredients within reach.
2- Cook the Noodles:
- Boil water in a pot according to the instructions on the instant noodles package. Add the noodles and cook until just softened, usually about 2-3 minutes. Drain and set aside.
3- Prepare the Vegetables:
Heat the olive oil in a frying pan over medium heat. Add the minced garlic and sauté until golden and fragrant.
Add the red bell pepper and cook until they start to soften, about 3 minutes.
4- Combine Ingredients:
Add the baby spinach to the pan and cook until wilted.
Push the vegetables to the side of the pan and crack an egg into the empty space. Cook until the egg is done to your liking.
5- Mix Everything Together:
- Add the drained noodles back into the pan. Season with soy sauce and chili flakes, then stir everything together until well combined.
6- Finish and Serve:
- Transfer the noodles to a serving bowl. Sprinkle with sesame seeds and top with chopped spring onions for a fresh crunch.
