Ingredients

🍜 1 pack of instant noodles

🧄 2 cloves garlic, minced

🫑 1/2 red bell pepper, thinly sliced

🥬 1 cup baby spinach

🥚 1 egg

🫒 1 tablespoon olive oil

🌶️ 1 teaspoon chili flakes (optional)

🌿 1 tablespoon soy sauce

🌾 1 teaspoon sesame seeds

🧅 2 spring onions, finely chopped




Instructions

1- Prep the Ingredients:

  • Start by mincing the garlic, slicing the red bell pepper, and chopping the spring onions. Set aside all the prepped ingredients within reach.

2- Cook the Noodles:

  • Boil water in a pot according to the instructions on the instant noodles package. Add the noodles and cook until just softened, usually about 2-3 minutes. Drain and set aside.

3- Prepare the Vegetables:

  • Heat the olive oil in a frying pan over medium heat. Add the minced garlic and sauté until golden and fragrant.

  • Add the red bell pepper and cook until they start to soften, about 3 minutes.

4- Combine Ingredients:

  • Add the baby spinach to the pan and cook until wilted.

  • Push the vegetables to the side of the pan and crack an egg into the empty space. Cook until the egg is done to your liking.

5- Mix Everything Together:

  • Add the drained noodles back into the pan. Season with soy sauce and chili flakes, then stir everything together until well combined.

6- Finish and Serve:

  • Transfer the noodles to a serving bowl. Sprinkle with sesame seeds and top with chopped spring onions for a fresh crunch.
