Ingredients

🥛 180 ml milk (just a finger below 1 cup)
🥚 2 eggs (reserve the white of 1 egg for brushing)
🥄 180 g yogurt (5 tablespoons)
🌻 160 ml vegetable oil (just a finger below 1 cup)
🍶 15 g baking powder (1.5 packets)
🧂 18 g salt (1.5 teaspoons)
🍬 20 g sugar (1 heaping tablespoon)
For the Filling:
🥔 500 g boiled potatoes
🧀 100 g finely grated cheese (mozzarella or similar)
🧈 2 tablespoons butter
🌿 Parsley, black pepper, salt to taste
For Coating:
🌾 Sesame seeds or roasted sesame seeds
Instructions
1- Prepare the Dough:
- In a large mixing bowl, combine all the ingredients except the flour.
- Stir the mixture until everything is well integrated.
- Slowly incorporate the flour while continuously kneading until you obtain a soft and slightly sticky dough. The consistency may vary depending on the type of flour used.
2- Shape the Buns:
- Divide the dough into 16 equal portions, rolling each piece into a smooth ball.
- Flatten each ball by hand into a disk, ready to be filled and shaped.
3- Fill and Form the Buns:
- To each disk, add a spoonful of the mashed potato filling, which you prepare by mixing the boiled potatoes, grated cheese, butter, and seasonings.
- Fold the edges over the filling, pinching them together to ensure they're well-sealed.
4- Prepare for Baking:
- Arrange the buns seam-side down on a baking tray lined with parchment paper.
- Brush the tops with the reserved egg white and sprinkle with sesame seeds for an additional crunch.
